Leave the city behind. We drive to palenques in the villages surrounding Oaxaca, where maestros mezcaleros have been tending agave for generations. We'll learn about distillation, terroir, and the production of artisanal and ancestral mezcal. We'll have lunch at one of the little towns along the way. Then you'll taste wild agave varieties and understand why single-village mezcal matters. Return to Waikicha in the evening for a private dinner.

The bar becomes a classroom. Our bar team guides you through three cocktails, covering technique, balance, and the cultural story behind each recipe. You'll make your own versions, taste everything, and leave with a printed recipe card set so you can recreate them at home. Recommended for drink nerds, couples, or small friend groups.
